Ingredients
  • 4 chicken marylands
  • 6 chicken wings
  • 300 ml buttermilk
  • 1 litre vegetable oil for frying
Flour mix

  • 2 cups flour
  • 1 tsp smoked paprika
  • 2 tsp chinese 5 spice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 tsp onion powder

Step by Step Instructions

Step 1

Cut chicken marylands and wings at the joints and discard wing tips.

Step 2

Poach chicken – simmer for 10-15 minutes until cooked.

Step 3

Make flour mix – in a bowl combine flour, smoked paprika, chinese 5 spice, onion powder, salt and pepper.

Step 4

Into a separate bowl pour the buttermilk.

Step 5

Dip chicken pieces into buttermilk and then roll in the flour mix.

Step 6

Fry chicken pieces in a pot of hot oil for 3-4 minutes until golden.  Serve with a mayonaisse dipping sauce.
